Dough

Our pizza dough is light and soft, as per the Neapolitan tradition. The lightness is the result of a long maturation of the dough and the use of 0.1 and 3 flour from 100% Italian stone-ground wheat.


San Marzano tomatoes

We only use organic San Marzano tomatoes, which stand out from the others for its typically bittersweet flavour, as well as the elongated shape of the fruit with parallel longitudinal depressions, the bright red colour, the low presence of seeds and placental fibers, the bright red skin, and easy peelability.

Fior di latte Campano

Fior dil atte is a fresh stretched curd cheese that boasts ancient traditions in Campania. The highest quality cow's milk is always used to produce fior di latte, coming from one or more consecutive milkings, which is delivered raw to the dairy within 24 hours of the first milking.
